Over what period of time? Various things do constantly run, and if the REx was running, it might keep the cooling fan on for a bit, if not also trying to cool the batteries. One thing that can make it drop is if you park at the end of the day and the temperature continues to drop overnight...battery temp affects the overall capacity. Do you see the SOC number actually change, or are you basing this on the range indicator?

Just wondering why the car looses soc every time you stop the car and start again?

What year? What model? Is there a large ambient temperature change from time off to back on? And how much?

I can leave mine for 2-3 weeks with very little to almost no SOC drop assuming temperature doesn't shift. If it gets colder or hotter then you may have shifts.
