The charging rate is somewhat dependent on the ambient temperatures and the ability of the cooling system to keep things at a safe level, which is not a constant. If you have set a destination in the satnav the range prediction is significantly lower when motorway is involved.

From what I've read, once you get to 80%, the DCFC ramps down and its no faster (and may even be slower) than a standard L2 charger. I'm pretty sure that if it starts to charge outside the off-peak window because of a low SoC it continues to charge rather than cutting out when a threshold is reached. My understanding was that the SoC below which it ignores off-peak is 30% but your experience would suggest otherwise.
