I haven't seen the following documented anywhere, so I though I would post it just incase anybody else has the same problem.
To get siri on your iPhone to work from the voice control button on the steering wheel, you have to enable "Allow siri from the lock screen" on your iPhone. ( Settings > Touch ID & Passcode) Once you've done that long press of the voice button will trigger siri.
