In case anyone else is trying to remove and replace their stripped oil plug, I got lucky with my first attempt and ordered THIS magnetic, "outer" hex-style drain plug from Amazon that fit perfectly and was far easier to screw back in without the fear of stripping.

And if that link stops working, just search for a drain plug with "M16x1.5" thread and that should probably work fine.
I also ordered an "inner" hex bolt removal kit but didn't end up needing it because I came up with a much cheaper idea while it was on its way to me. I cut out a small piece of paper and wrapped it around my hex socket to help fill in the gaps of the stripped head and create some extra friction between the metals. Didn't take much force to finally crack the bolt loose.
